Banana Carrot Almond Muffins

On a lazy afternoon, nothing seems like a better way to pass the time than baking a fresh batch of muffins. These muffins sneak in a bunch of secret healthy stuff like carrots and raw almonds, too, so you don't have to feel as guilty about eating something so incredibly delicious.

Banana Carrot Almond Muffins
1 cup mashed bananas (~3 very ripe bananas)
1 cup brown sugar
¾ cup canola oil
2 eggs
2 cups sifted flour
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
½ tsp nutmeg
½ tsp ground ginger
1 cup finely grated carrots
¾ cup of chopped raw almonds 
Combine bananas, brown sugar, salad oil and eggs in mixer. Mix until the batter begins to resemble the most disgusting case of diarrhea you have seen.

Sift flour, soda, salt, cinnamon, ginger, and nutmeg together in large bowl.



Stir in banana mixture. Fold in carrots.


Spoon into muffin tray. Bake at 350 F for about 30 minute. Toothpick test it, then adjust time accordingly. When done, enjoy ASAP.
